Little Almond Rocks ~ rochers aux amandes

Well I have to say these are cute little cakes, are both simple and strange to bake, but are truly delicious, especially if you like almonds. Only three ingredients – yes three- caster sugar, egg whites and ground almonds. Hardly a blog but definitely worth sharing.

One thing I would say, you may have to vary the cooking times because the recipe I used said 120 fan for 15 mins, which I did think didn’t sound right, it didn’t work for me!! I turned the oven up to 140 fan and cooked them until they took on some colour, about 20mins, so just keep an eye on them ( I thought it all seemed too easy ) the other thing is once the mixture is ready you have to work quite quickly to get them blobbed on the baking sheet because the mixture starts to crumble. Having said that don’t let it put you off, they really are very simple and we loved them!! Give them a try you won’t be disappointed. 

Prep time is 20mins – cooking time is approx 15-20 mins.

Preheat oven 140 fan

You will need a large baking sheet greased with butter.

  • Butter for greasing
  • 3 egg whites
  • 250g caster sugar
  • 250g ground almonds

Method:

Stir the egg whites and sugar together in a pan set over a low heat. Keep stirring until the mixture thickens, this takes about 15mins. 

Remove from the heat and stir in the ground almonds, stir to make sure they don’t stick to the bottom of the pan.

Arrange the mixture on your prepared baking sheet in little mounds, spaced apart. ( they don’t really spread ) 

Bake for approx 15-20 mins or as I mentioned until they have taken on some colour. Remove from the baking sheet and cool on a wire rack.

It’s that simple, they keep well in a tin for a few days.
